shad baked in the oven

Shad (or Elf) is a popular and good eating fish and can be caught in different areas. Off the beach, of the rocks or even up the river.  Wherever or however you catch it, this easy and delicious recipe is perfect for Shad. 

What you'll need

2kg piece of shad

1 lemon

2 tbsp olive oil

A dash of white wine

Feta cheese

Fresh coriander

5  tbsp of passion and imagination…..

  • Step One

    Score it 3 times to the bone and put salt and pepper in the cuts. Place in the fridge to rest until it's time to cook.

  • Step Two

    Mix together the olive oil, white wine and lemon.

  • Step Three

    Drizzle olive oil over a baking tray and place the fish on it.

  • Step Four

    Pour the mix over the fish a sprinkle the feta and coriander on top.

  • Step Five

    Place fish in the oven at 180 degrees. When the feta is golden brown the fish should be cooked through.
